- 2 large red tomatoes
- 1/4 cup Panko bread crumbs
- 4 slices turkey bacon
- 2 TBSP reduced fat parmesan cheese
- basil
- salt
- cooking spray
- Preheat oven to 450 and spray a large baking dish with cooking spray. Slice the tomatoes.
- Layer the tomatoes in the baking dish, sprinkle with salt and basil.
- Cook the bacon in the microwave and cut into bite sized pieces. Layer the bacon on the tomatoes.
- Sprinkle with bread crumbs and parmesan, then mist with cooking spray.
- Bake 10 minutes or until bubbly.
