Chickpea Salad w/ Citrus Vinaigrette

  • 3 cans chickpeas drained and rinsed (about 3 cups)
  • 1 ½ cups corn fresh or frozen
  • 1 small red pepper chopped
  • 2 TBSP dried cilantro
  •  Fresh diced tomatoes

  • ¼ cup orange juice (fresh squeezed clementine)
  • 3 tbsp lime juice
  • 2 tbsp sugar free maple syrup 
  • ½ tsp salt
  • 2 tsp white or red wine vinegar

    Make the Salad:
  1. Drain and rinse the canned chickpeas and put them into a large bowl.
  2. Toss red pepper and cilantro  in with the chickpeas.
    Make the Dressing:
  3. Put the orange juice, lime, syrup, salt, and vinegar in a bowl and stir. 
  4. Drizzle the dressing over the salad and mix well.
  5. Serve alone or over quinoa or couscous.
