Sweet Potato, Kale, Quinoa Burger Patties

  • 3 medium sweet potatoes
  • 1/4 cup quinoa (uncooked)
  • 2 TBSP I can't believe it's not butter
  • 2 tbsp sugar free maple syrup
  • 1/8 tsp cayenne
  • 1 cup chopped kale (or spinach)
  • 1/2 cup panko bread crumbs
  • salt & pepper
  • hamburger buns
  • Toppings (vegan cheese, spinach, tomatoes, mustard, vegan mayo, onions, pickles)
